The Best Recipe of Banana Bread Muffins

This recipe has been my favorite for many years now. My coworker gave it to me.  It's moist and delicious. I like to add a spin to it, with orange zest and orange glaze. I made this batch and it was gone as soon it cooled down.



Ingredients:  
3-4 ripe bananas
1 cup sugar
2 eggs 
1 stick butter (melted)
1 2/3 cup flour
1 cup walnuts
1/2 tsp baking soda
1/2 tsp baking powder
Orange zest from 1 orange

Glaze: 
1 egg white
1 1/2 cup powdered sugar
1/2 tsp orange flavor 
1/2 tsp lemon juice

Preheat oven to 325 F.
Peel bananas and add em to the mixing bowl.
Mix em with sugar for a minute. 
Add orange zest. 
Add eggs melted butter. Mix for a few seconds on low- med speed. 
Mix flour with baking powder and soda. Add to the bowl , mix for few more seconds. 
Add nuts, mix with the spoon. 
This recipe fits perfectly for 1 loaf. I just made different sizes of muffins. Use an oil spray before you put in the baking dishes. Bake for 20-30 min  depends on the oven. 
 For the glaze mix egg white with powdered sugar. 
Add orange flavor. Mix well until smooth.
Squeeze lemon in.  
Brush on warm muffins.
