Crispy Mashed Potato Pancakes


Of all the new recipes I've made recently, these Mashed Potato Pancakes are one of the biggest hits in my kitchen. I made them for family lunch, but they were equally perfect for any meal. I find most kids love to eat anything they can hold in their little hands, so these little cakes are a special treat. These are delicious on their own, and with ketchup or sour cream. Use real mashed potatoes instead of boxed. When cooking in butter, resist the temptation to flip them too early, otherwise a crunchy golden crust won't form.  If you've never had crunchy mashed potato pancakes, you're in for a treat.

   Ingredients:       
2 cups mashed potatoes
1/2 cup grated Parmesan cheese
1/3 cup chives or green onions, thinly sliced
2 large eggs
3 tbs flour 
Black pepper

Roasted garlic croutons to roll in.
Butter to saute in.


 For mashed potatoes:
Yellow potatoes is the best
Butter
Mayonnaise
Heavy whipping cream
Vegeta, salt  

Boil potatoes in salted water until ready. Pour water out, add butter.
Mix well until it's smooth.
Add mayo.
Add heavy whipping cream or half and half.
Taste if it has enough salt. If it's need more salt add  vegeta.
Now mashed potatoes is ready to eat or make pancakes, vareniki and pirojki.





Mix with fork mashed potatoes, Parmesan cheese, eggs, chives, black pepper and  flour. 
Use a food processor or by hand, grind into crumbs.










Make a pancakes and roll into crumbs. 
Saute in butter. 
You can fill it with mushrooms or anything you like. I tried it with roasted carrots. It taste great with anything or just crunchy.

    2. I love frying up leftover mashed potatoes like this, but I never used an actual recipe to do so and they usually fall apart. I love the way yours get all crunchy...can't wait to try these!
